Springtime Sandwich Cookies

Celebrate springtime in the kitchen with these must-try chocolate sandwich cookies. The cream cheese filling and chocolate cookie pair perfectly. Use food coloring to make these Springtime Sandwich Cookies.

Cookie dough
1 Package Devil’s Food Cake Mix
2/3 cup butter (room temperature)
2 eggs
Mix all ingredients together. Form into 2” size balls. Bake at 350 degrees for 7 – 10 minutes. Cool completely for 20 minutes. 

Filing: Sandwich cookies
4 ounces cream cheese, at room temperature
2 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
Assorted food coloring, optional
Water, as needed

In a medium bowl, using an electric mixer, beat the cream cheese and vanilla together until fluffy. Gradually add the powdered sugar and mix until smooth. Color the frosting with food coloring, Add water 1/2 teaspoon at a time for spreadable consistency.

Spread the frosting on the flat side and put another cookie on top. Refrigerate for 30 minutes
